¿Cómo subir las ventas en un restaurante?

Lo mejor sería preguntarse: ¿Por qué han bajado las ventas en mi restaurante?, ¿qué he hecho para adaptarme al nuevo mercado?
Me temo, que estas dos simples preguntas no han sido realizadas por muchos empresarios estos últimos años. Entonces a sus respuestas definitivamente no se ha llegado. ¿Pero qué acciones concretas se han realizado para subir las ventas en un restaurante?
Analice estas preguntas y veremos cuántas respuestas serán afirmativas:
- ¿He hecho un curso este último año sobre gestión de restaurantes?
- ¿Conozco los costos de mi restaurante y sé controlarlos?
- ¿Entiendo los escandallos y cada receta está costeada?
- ¿Me he informado en blogs, revistas de hostelería, etc. para concer a la perfección cuáles son los productos que el cliente gastronómico demanda?
- ¿Conozco perfectamente qué motiva a un cliente comer fuera de casa, por lo cual, realizo estrategias en esa línea?
- ¿Sé como motivar a mi equipo de trabajo?
- ¿Es la fidelización y la atención al cliente nuestra biblia?
- ¿Estoy presente activamente en la red con una web atractiva y con una planificada estrategia en las redes sociales especializada en gastronomía?
Con estas preguntas, sólo deseamos reflexionar y que nos demos cuenta de que tiene más formas de subir las ventas de las que imagina en su restaurante y que mucho está en sus manos, pero lamentablemente, muchas veces lo deja pasar.
Entonces, cómo subir las ventas en un restaurante:
Primero que nada ponerse manos a la obra y comenzar a poner orden a la gestión y el marketing del restaurante. ¿Por qué la formación brilla por su ausencia en los restaurantes? ¿Por qué si un médico estudia para ejercer su profesión, un abogado, un director financiero, el de los recursos humanos, el experto en marketing…. y un dueño de restaurante no? ¿Qué moda ha pasado en el mundo, que si tengo algo de dinero, me monto un restaurante? ¿Y cómo piensa llevarlo, por arte de magia? Pues ahora por esa misma magia desaparecen los clientes, ¡se esfuman!
Si quiere tener su restaurante lleno, primero analice por qué se han ido sus clientes. Luego fórmese y mejore la gestión de su restaurante, no hay manera más efectiva de subir las ventas que saber cómo hacerlo, por dónde comenzar y qué hay que mejorar. Si no conoce estos puntos, será difícil subir las ventas.

Mi trabajo consiste en la
operación, administración, y dirección de vinos (sommelier) del Restaurante
Eloise. Mis labores están enfocadas principalmente en la atención al cliente, dándoles
seguimiento a cada uno de ellos durante su estancia en el restaurante.
Los conocimientos adquiridos
en CESSA Universidad me han ayudado para tener una visión global de lo que es
un negocio en el que el objetivo principal es el cliente.
En el CESSA también me enseñaron
las herramientas indispensables para desempeñar efectivamente mi trabajo, tales
como costeos y contabilidad; siempre dándole un gran valor al bienestar del
personal, y por supuesto al comensal.
Pero lo más importante que me enseñaron es crear experiencias que se quedaran en el corazón de los clientes y que el servicio es algo que nace del corazón, por lo que siempre tienes que luchar por tu trabajo.

Mi carrera dentro de la
industria del vino y en el Restaurante Eloise inició con una entrevista que me
realizó Abel Hernández, a quien admiro profundamente por su ética profesional,
su creatividad como Chef y su calidez humana.
A partir de esa entrevista
empecé a trabajar en Eloise y al poco tiempo se dio la oportunidad de convertirme
en socia, no sólo de este restaurante, sino también en la Casa de la Yeya.
Desde mi adolescencia me
interesó el tema del vino. Durante la carrera y gracias al Lic. Otero mi pasión
fue creciendo y después de varios diplomados en la Cave y la Asociación
Mexicana de Sommelier, el mundo del vino se ha convertido en mi gran pasión. He
tenido la fortuna de estar rodeada de gente que me ha transmitido su
conocimiento y pasión hacia esta bebida como son, Ángel Salinas, René Rentería,
Andrés Amor y Roberto Curiel.
La mayor satisfacción que
puedo obtener por mi esfuerzo es cuando un cliente me agradece por su
experiencia en el Restaurante o por el vino que he seleccionado especialmente
para él.
Los Reconocimientos que me han
otorgaron son:

1er. lugar de la nariz de
México.

Juez del concurso de
Destilados Artesanales y de Origen Mexicano.
·
Juez para la revista Tequila
Apasionado.
A un alumno de prepa le diría que si quiere dedicarse a la industria de
la hospitalidad estudie en la Universidad donde profesionales de la Industria
den clases. Que estudie en una Institución que no le va e enseñar de cocina,
finanzas o vinos, sino que estudie en una Universidad en la que la vocación de
cada persona que está ahí, esté convertida en pasión, Eso sin duda, es lo que
es CESSA.
Lo que más extraño de CESSA Universidad con las clases tan divertida de
Oskar Palavicini, las novatadas, las risas de Teresita Guash, las clases de
panadería y en general el ambiente. Definitivamente,
el mejor momento que viví en el CESSA fueron las clases de servicio en el
Restaurante-Escuela. Elegí al CESSA por que me hicieron sentir en casa, no fui
un número más como en las otras Universidades.

Cover, la aplicación que te ayuda cuando tienes que dividir la cuenta entre tus amigos.

Salir a cenar con los amigos es algo muy agradable que se complica cuando es el momento de dividir la
cuenta. Para evitar mal entendidos, un grupo de desarrolladores crearon "Cover", una aplicación que ayuda a organizar y a dividir el pago de la cuenta.
Solamente hay que abrir un "table" y agregar a las personas que están comiendo y ¡listo! Además, puedes poner tu tarjeta de crédito y pagar automáticamente, sin necesidad de llamar a un mesero.
¡Esperemos que esta aplicación llegue muy pronto a México!

Actualmente
soy Gerente de Capacitación en el hotel The St. Regis Mexico City. Dado que
capacitación es un área que depende de recursos humanos, mi principal función
es la atención a los empleados. Gestiono todos los programas de capacitación en
el hotel, desde impartir capacitaciones corporativas hasta programar entrenamientos
internos o conseguir al proveedor indicado.
Durante
mi carrera tuve la suerte de hacer prácticas profesionales en lugares sumamente
enriquecedores, tales como en el hotel The St. Regis Mexico City en el área de
recursos humanos, involucrándome en los procesos de reclutamiento, selección y
capacitación de todo el personal. Dos años después, se dio la oportunidad de
trabajar en el hotel Disney´s Hilton Head Island Resort en donde me desarrollé
en el área de alimentos y bebidas. Lo más valioso de esta experiencia fue sin
duda, la oportunidad de vivir y aprender de una de las filosofías
organizacionales más exitosas a nivel mundial en la industria de servicio. Más
adelante realicé un periodo de prácticas en Rosewood Mayakobá en la Riviera
Maya, en donde me familiaricé con la operación de un spa en un resort de lujo. Al
terminar la Licenciatura en Hotelería, surgió la oportunidad de entrar a la
empresa donde tuve mi primera experiencia profesional; pero esta vez como
Coordinadora de Capacitación.
Siempre
me ha gustado estudiar. Fui acreedora a la “Beca talento oro” en Cessa Universidad hasta titularme por
mérito académico y obtener el reconocimiento de Hotelier. Laboralmente he
obtenido un par de reconocimientos internos muy significativos en el hotel;
pero considero que el reconocimiento más importante que he logrado, es poder
observar día con día el desarrollo tanto laboral como personal de la gente con
la que tengo el gusto de trabajar.
Más
que conocimientos, considero que CESSA Universidad genera en sus alumnos un
enfoque de excelencia en el servicio orientado a la acción. En la industria del
servicio no sólo es importante tener conocimientos sobre cuestiones operativas,
sino también lograr entender el motor de las personas que brindan un servicio y
transmitir esta pasión por servir.
Lo
más valioso que he aprendido como egresada de CESSA Universidad es la
importancia de hacer lo que te apasiona. No se trata de un conocimiento
específico lo que hace grande a las personas, sino la disposición, entrega y
ganas por aprender. Las aptitudes se aprenden y se desarrollan, pero tener la
actitud para hacerlo y para sacar adelante los proyectos que tenemos enfrente,
es algo que únicamente se logra alimentando tus pasiones.
Yo
le recomendaría a un alumno de prepa que haga caso omiso de los comentarios de
los demás respecto a lo que debería estudiar. Que investigue y compare opciones
hasta poder fundamentar su decisión. La competencia es cada vez más dura
y la única forma de sobresalir es buscando la excelencia y la especialización.
Antes de tomar la decisión final que se pregunte: ¿a qué me dedicaría incluso
si no me pagaran?
Lo
que más extraño de la universidad son mis amigos, las clases, los maestros, las
actividades y los ¡chilaquiles! Creo que el hecho de que sea una universidad
relativamente pequeña, permite forjar relaciones sólidas entre toda la
comunidad.
La
mayor parte de las razones de mi elección fueron académicas. Sin embargo, la
ubicación, las instalaciones, el prestigio, pero sobre todo el alto grado de
personalización que se ofrece en la institución son sin lugar a duda, grandes
ventajas competitivas.

GRUPO PANDO Y CESSA UNIVERSIDAD UNEN ESFUERZOS

Durante este semestre (enero a mayo de 2011), nuestros alumnos de Gastronomía y Artes Culinarias en materia de Cocinas Orientales, realizaron recetas tomando como base la sardina. En el transcurso del semestre, ejecutivos de la empresa Calmex semana a semana han estado presentes en el desarrollo de estas creaciones. Calmex, empresa del Grupo Pando, está dedicada a comercializar productos como atún y sardinas en salsa de tomate y aceite vegetal enlatados.
Este jueves 12 mayo, se llevará a cabo la final del concurso Calmex-CESSA, del cual el jurado estará integrado por la Chef Mónica Patiño, el chef Mikel Alonso, el crítico gastronómico Juan Claudio Poblete, el Sr. Philippe Gerondeau y un ejecutivo de Calmex.
El equipo ganador será acreedor de un viaje todo pagado a la pesca de sardina a bordo de los barcos de la empresa, una canasta de productos Calmex y vinos de Santo Tomás.
En CESSA Universidad estamos comprometidos con la vinculación entre estudiantes y empresas, por tal motivo nos sentimos orgullosos de contar con el apoyo y participación de Grupo Pando.

CESSA recibe por parte de CONAET la acreditación para su programa de la Licenciatura en Gastronomía y Artes Culinarias

El Consejo Nacional de Educación Turística más conocido como CONAET, es una asociación civil sin fines de lucro, cuyas actividades están dirigidas a elevar la calidad de la educación del área turística en México, cuyos objetivos son la ACREDITACIÓN, la CAPACITACIÓN y la DIVULGACIÓN, de acuerdo a la importancia del turismo en la economía nacional, a los retos que plantea la globalización en el siglo XXI y a los procesos de calidad en la formación establecidos a nivel nacional.
El Lic. Rafael Gutiérrez Niebla, presidente de CONAET entregó a nuestra Rectora y fundadora, la Q.F.B. Luz María Arteaga de Guerrero, la constancia de acreditación a la licenciatura de Gastronomía y Artes Culinarias. Sus programas de Licenciatura en Hotelería y de Administración de Restaurantes ya han sido acreditados anteriormente por esta mismo organismo.
El CESSA además de esta acreditación ha merecido el reconocimiento a su calidad de su enseñanza de parte del Gobierno Francés, al otorgar la presea “Palmas Académicas de Francia” y además el Gobierno Mexicano a través de la Secretaría de Educación Pública le ha otorgado en 3 ocasiones el Reconocimiento a la Excelencia Académica y a la Excelencia de sus Programas Académicos.

Plática y reclutamiento: The Little Nell Hotel en Aspen

El pasado jueves 09 de septiembre los alumnos de 8vo semestre de CESSA asistieron al reclutamiento del legendario "The Little Nell ; Ski In / Ski Out Resort". Ubicado en Aspen Colorado, Little Nell es uno de los 37 hoteles de todo Estados Unidos que tiene 5 estrellas y 5 diamantes.
Con más de 50 posiciones disponibles Efrén Vargas, Director Regional de The Little Nell, entrevistó a alumnos de nuestras 3 licenciaturas. Al final del día comentó que el perfil de los alumnos le gustó tanto, que reclutará también para otras propiedades del Grupo.

Actualmente trabajo en Eurest
Compass Group México la empresa líder a nivel mundial de servicios de
alimentación y de soporte. Estoy a cargo de la dirección de retención de clientes de Eurest a nivel nacional. Mi
trabajo consiste fundamentalmente en 3 labores principales:
1. Crear, fortalecer y
mantener relaciones profesionales fuertes con nuestros clientes.
2. Obtener, analizar y
compartir sus expectativas para hacer escuchar la voz del cliente de manera
interna en la empresa.
3. Apoyar, agilizar y
dar seguimiento a todas las acciones que conlleven a cumplir los objetivos de
nuestros clientes.
Lo que aprendí en CESSA
Universidad ha sido fundamental para mi desempeño en éste y en todos los
trabajos que he tenido. Considero que el nivel académico que adquirí en esta
institución es un diferencial importante en mi carrera y en mi puesto. Incluso
he contratado ya a varios alumnos de CESSA porque creo que es aquí donde nos
dan las "armas" para ser sobresalientes en este medio.
Además de toda la teoría, lo que más me ha servido es la práctica
adquirida en las aulas y la experiencia de hacer prácticas profesionales en la
industria, sin dejar a un lado la calidad humana y ética. Todos estos factores han
sido muy importantes en mi vida profesional y personal.
En la industria de
alimentación masiva cuento con una interesante trayectoria en comedores
industriales. Trabajé 7 años en Sodexo, 5 años en operaciones y 2 en retención
de clientes. Hace 3 años decidí cambiarme a la empresa número uno a nivel
mundial: Compass Group, fungiendo 2 años como Gerente Regional y posteriormente
me promovieron para hacerme cargo del área de retención de clientes.
La industria de la
alimentación masiva es noble y tiene mucho futuro en el mundo. Principalmente
en países de desarrollo emergente como México, que están en una etapa de crecimiento.
El potencial a alcanzar es inmenso.
La alimentación masiva es un trabajo muy meticuloso porque
es un negocio de "centavos", las utilidades se definen por escasos
centavos por cada charola vendida y esto hace que un mínimo cambio en los
costos o una mala proyección tengan efectos negativos de manera muy
significativa en tus utilidades.
A diferencia de los restaurantes, la relación precio-calidad
juegan un papel fundamental en el éxito de este negocio, porque se espera comer
como en casa por menos de 50, 40 ó hasta 30 pesos, e incluso te comparan con
algunos restaurantes.
A través de los años, he
ganado algunos premios y reconocimientos como Chef. En esta industria tengo la
satisfacción de conocer varias posiciones en este ramo; desde estar de cerca en
las operaciones del día a día; administrar y controlar varios centros de
consumo, ser responsable por toda una región o un estado, hasta lograr controlar
el riesgo de no perder más del 5% de 250 clientes a nivel nacional. Sin duda,
éste ha sido el mejor reconocimiento a mi trabajo.
También he tenido la oportunidad de ser entrenado y
capacitado en otros países como París, Chile, Argentina, Inglaterra y Estados
Unidos; bajo la guía de los mejores profesionales de la industria a nivel mundial,
compartiéndonos y enseñándonos acerca de las mejores prácticas, las más
novedosas tecnologías y las mejores técnicas de esta industria. Es alentador saber
que cada vez viene algo mejor y es un ciclo continuo.
Lo más valioso que aprendí
como egresado de CESSA es la importancia que tiene la constancia, dedicación y
profesionalismo que nunca se debe perder. Sobre todo en este ramo que cada vez es más popular y
mucha gente pone "negocios" de comida; hoy en día la competencia es
feroz.
Lo que más extraño de CESSA es ver a mis amigos diariamente.
Afortunadamente seguimos en contacto e incluso algunos siguen siendo mis
mejores amigos, también algunos profesores y definitivamente ¡extraño las
clases de cocina!
En esta Universidad viví los mejores momentos de mi vida. Me
sería difícil elegir sólo uno, sin embargo, recuerdo cuando gané el premio al
mejor platillo en segundo semestre en el concurso de cocina Jacques Bergerault.
Recuerdo también, los cursos de vino con Paul Brunet, así como el evento donde
dimos de cenar a los Chefs de los presidentes de varios países del mundo.
Elegí a CESSA porque me transmitió una atmósfera muy
familiar, diferente a una gran universidad gris donde solo eres un número. Aquí
soy Eduardo y aquí, ¡todos nos conocemos!
Por eso a cualquier aspirante
le digo que si tiene interés en el ramo de la hotelería, gastronomía,
restaurantes, alimentación masiva, etc. la mejor opción es el CESSA. La calidad
académica con la que uno sale de aquí es ejemplar.

cuando llegué a CESSA Universidad sabía que era el lugar correcto para mi y no
me equivoqué.

La historia de un
gran emprendedor
Se desempeñó en el
sector del turismo durante 26 años; nunca
pensó en dedicarse a otra cosa que no fuera el servicio, la hospitalidad o ser independiente.
Egresado de la
Licenciatura en Hotelería por CESSA Universidad, hace 35 años tuvo posiciones directivas
en A&B en Grupo CRM , Grupo Lynis , Grupo Aeromexico , Grupo Posadas y
Camino Real.
El cambio comenzó cuando
aceptó trabajar en Novartis: "El Presidente de Novartis decía que no tenía
empleados, sino huéspedes, entonces necesitaba a alguien de hotelería que
manejara esto. Me voy con ellos y hacemos contacto con Carlos Páez,
sobreviviente de Los Andes, para llevarlo a un evento del laboratorio. Él es el
culpable de que yo sea un emprendedor, porque hicimos buena amistad y después
de un año me dice: “Por qué no vendes mis conferencias en México"
Hoy, después de 8
años, Luis Valls tiene su propia empresa
Speakers & Co, con tres unidades de
negocio : Speakersmexico.com , Showcast.mx y Speakers Editores.
"Monté una
agencia en donde la gente conociera al speaker por persona, qué hace, cómo lo
hace y comencé a entender la necesidad del cliente".
¿Qué conocimientos adquiridos en CESSA Universidad has puesto en
práctica durante esta experiencia?
"Con la
experiencia nos dimos cuenta que vender talento para eventos funcionaba muy
bien, porque después que compraban a Carlitos nos pedían otra persona y empezó
a ser como una necesidad de coaching” .
Fue así como se
percató que el negocio no existía en México y decidió independizarse.
“El primer año
vendimos 52 conferencias y el año pasado vendimos 325, es un crecimiento exponencial,
el año pasado fue de 32%".
Liderazgo, mujeres
líderes, entorno político, emprendimiento, deportistas, motivacionales están
entre el grupo de conferencistas que ofrece Luis Valls. "Cada uno de los
que solicitan o busco es porque encajan en alguno de los rubros y debe tener
una historia que genere un valor agregado a la gente para que se lleven una
herramienta que puedan aplicar en su vida diaria, en su familia, en su trabajo,
si no lo genera se van a ir con las manos vacías y de qué sirve.
Somos moldeadores de
líderes, no hacemos líderes ni los generamos, nuestro enfoque es moldear
líderes por medio de líderes, ese es nuestro trabajo".
¿Qué
recomendarías a un alumno de prepa que está considerando opciones de
universidad en México para estudiar Hotelería?
Yo tuve la fortuna, a los 18 años de elegir una
carrera que me ha dado casi 34 años de trabajo, tengo 2 hijos en la edad de la
prepa y siempre les digo cuando hablamos

carrera que piensan elegir para estudiar, dos consejos que espero también les
sirvan a los lectores preparatorianos
Primero : En la vida solo hay dos decisiones muy
importantes que tomar entre los 18 y los 28 años , La primera es a que
te vas a dedicar y la segunda es Con quien vas a compartir tu vida
Con esto trato de explicarles que tu compañero ( a ) de vida y tu proyecto
de vida profesional solo se logran
consolidar con Amor y Pasión por lo que haces y por con quien lo compartes y ambas decisiones son
ÚNICA responsabilidad individual y nadie
debe de influir en ambas decisiones.
Segunda; Siempre les he dicho …dedíquense el resto de sus vidas a la profesión u oficio que serian
capaces de hacer ..sin cobrar …. Ahí trato de hacer les entender que la
vocación va muy ligada a la pasión por
lo que nos gusta, mucho deciden carreras por que son de generación familiar o
porque se gana muy buen dinero en algunas profesiones. Lo importante siempre es
aquello que nos nace hacer y nos hace tener habilidades naturales. La parte de
remuneración económica cuando te dedicas hacer lo que te apasiona siempre
llega.
Dedicarte a la Hotelería y/o a la Gastronomía
,,,es por pasión, no importa cual especialidad sea la que elijas, SOLO se permite si tu
pasión y tus habilidades de
Servicio, Calidad, Atención al Cliente , Idiomas y sobre todo esta actitud de
lograr clientes satisfechos es lo que realmente por vocación que lo haces.
Esta profesión que pudiera verse de Glamour o
de Viajar por el mundo es muy atractiva, la
realidad es que es una profesión que te atrapa para el resto de tu vida
y hace que seas un ser humano feliz de haber elegido la carrera correcta, es un
trabajo de 14 horas diarias, fines de semana laborables, alta rotación “nómada”
de ciudades, miles de clientes que convergen con tu trabajo , en fin, soy un
enamorado de mi profesión, de mi trayectoria tanto en Hotelería como en
Gastronomía, de mi alma máter CESSA, pero sobre todo a quienes siempre me ha acompañado todos los días en esta bella
profesión.

¿Quién es y qué hace Mauricio Eggleton?
“En ME Catering by Mauricio Eggleton mi trabajo consiste en proveer
catering para producciones fílmicas, fotográficas y sociales. La idea es tener
un restaurante móvil, ya que todos los días nos movemos con todo el equipo y
alimentamos a todo el staff que trabaja dentro de una producción. Yo me encargo
de toda la parte de logística respecto al servicio y a la planeación de menús, acorde
a los presupuestos y al lugar donde se
trabajará. Sin duda, cada día es un reto diferente.
En paralelo a este trabajo, mi pasión por la cocina me llevó por
el camino de la fotografía y me dio la oportunidad de desempeñarme como ecónomo
(food stylist), especializándome en la fotografía de alimentos.
Además, ser Chef invitado Dinner in the Sky ha sido una gran
experiencia. Logré la mancuerna perfecta entre el catering que desempeño día a
día y la parte gourmet, que muchas veces en alimentación masiva no se encuentra
presente. Cuando me llamaron para participar en este proyecto, me di cuenta que
era la mejor forma de complementar todo lo que me gusta hacer, desde el reto de
la planeación del menú y la logística, hasta la parte del estilismo de
alimentos en cocteles y canapés.
A lo largo de mi trayectoria profesional he recibido diversos
reconocimientos, tales como la mención honorífica al GASTRÓNOMO CESSA; por
otro lado, en Dinner in the Sky me reconocen en redes sociales como el Chef
más joven de DITS. También estuve hace poco en un programa piloto “KTF”
siendo el ganador. Participé además, en IMAGINARIA Gastronómica de Palacio de Hierro,
entre otros concursos.
Pero en realidad, creo que el reconocimiento más grande es el
trabajo que desempeño día a día, donde todas las personas de una producción
agradecen que exista un servicio de catering, completamente diferente a lo que estaban
acostumbrados, pues claramente la calidad, presentación, higiene y sabor en
este ramo de la alimentación estaba muy abandonado.
¿Qué te llevaste de CESSA?
Los conocimientos adquiridos en CESSA Universidad me han servido
en todos los sentidos. Todo lo aprendido en torno a la cocina, que es lo que más
me gusta; la enseñanza en la logística, realización de presupuestos, cotizaciones,
plan de trabajo, pero lo más importante es que me brindó los conocimientos
necesarios para emprender un negocio. El
CESSA no solo me enseñó a cocinar, me dio las bases para montar un negocio
exitoso desde cero.
Como egresado del CESSA lo más interesante y valioso ha sido la
facultad de creer en mí. Esta universidad me ayudó a salir con una mentalidad
diferente a la mayoría y saber que independientemente de lo que quieras hacer o
a lo que quieras dedicarte, tendrás la seguridad de tener todas las bases
necesarias para ser un emprendedor exitoso.
¿Tú mejor momento en la universidad?
El mejor momento que recuerdo que viví en la universidad
fue cuando recibí la mención honorifica GASTRONOMO CESSA de mi generación.
A todos los aspirantes les recomiendo que estudien lo que más
les apasione y no lo que la gente cree que es lo mejor para ellos. Les aconsejo
que estén bien informados sobre intercambios, planes de estudios, reconocimientos
de la universidad y que se informen sobre el campo de trabajo de sus egresados,
En mi experiencia fui a muchas universidades y las aulas de trabajo fue lo que
más gustó de CESSA Universidad.

Me llamo Jorge Tradd y actualmente funjo como
Subdirector de Ventas en el Hotel W Mexico City. Tengo, entre otras
responsabilidades, la de supervisar al equipo de ventas, administrar las
cuentas claves del hotel, participar en la definición de sus metas y en la
elaboración del presupuesto anual.
Puedo orgullosamente decir que el logro más importante
que he tenido en mi carrera profesional ha sido alcanzar puestos directivos en
dos de las cadenas hoteleras más importantes a nivel mundial: Hilton y
Starwood. Considero que aún no he terminado de realizar mis retos y continúo
trabajando para lograrlo; para mí ha sido muy importante empezar desde abajo.
El haber estudiado en CESSA Universidad me ayudó
porque la carrera engloba un conjunto de conocimientos académicos y laborales,
pero sobre todo personales. Me siento orgulloso de haber pertenecido a esta Universidad
que me dió las bases necesarias en estos tres aspectos, haciéndome competitivo en
el ámbito laboral. Ahora más que nunca me doy cuenta que si no hubiera tenido
estas bases hubiera sido muy complicado destacar.
Considero al CESSA como mi segunda casa y estoy muy
agradecido con la Universidad. Antes de ingresar a ella no había sentido pasión
por un proyecto en particular. La Universidad me dió una nueva perspectiva de
vida y me permitió encontrar mi propósito en la misma: la hospitalidad y el
servicio.
A los alumnos de preparatoria que están pensando en
estudiar la licenciatura en hotelería, les aconsejaría que realmente eligieran la carrera si tiene
relación con su pasión en la vida, con aquello que les encante, y de esta
manera no fallarán y la probabilidad de tener éxito será muy alta.

Designing the Next Decade of Hospitality Industry - Christian Henning (3rd Semester Bachelor´s Degree in Hotel Management)

My name is Christian Henning, im a current student here at CESSA Universidad completing my third semester. I am here to talk a little about how a student in visions the hospitality industry 10 years from now, but before going into the main topic I would like you to know where and why I started.
A couple of years ago I was a high school graduate with no idea of what I wanted to study for a career. I took on a temporary summer job which ended up extending for six months as a helper at the banqueting area in the food and beverage department at the Four Seasons Mexico city. I had no idea of what I was getting into at the beginning, although in a short time I had a vague idea of what this was all about: providing a service while demonstrating consistency in excellence and quality. I enjoyed what I was doing and realized it was a different job from any other, as the hotel for me was the place where i could extend my personality and my qualities. I was fascinated by this idea and decided to enroll in a University which better suited my needs and future comings.
Where do I as a student see the hospitality industry in 10 years? In order to answer this general question, we have to see the big picture. The direction the fastest growing industry in the world is taking can be identified with current trends:
Diversity
The tourism and hospitality industry is among the most diverse of all industries in terms of employees and guests. Hospitality and tourism present a unique opportunity to understand new cultural experiences for both employees and the tourists.
Diversity in the hospitality and tourism industry is enhanced through visions that promote equal employment opportunities to cater for the different nationalities in the market. The industry gets to appreciate the world's socio-cultural and economic differences through the recruitment of people of diverse backgrounds. Due to the multiple options for new employment seekers and the need for a wider diversity of races and cultural backgrounds in the organizational structure of hospitality establishments, people will begin to travel even more, attracting different markets and workforce. In a way hotels will increasingly attack the global market in the next few years. Hospitality establishments are also a great tool to enable work abroad, as legislations protecting employment have been implemented in many countries around the globe.
• Focus to service, make service better
Service
In the last few years there has been a global competition in the service area, quality in service is playing an essential role in attracting costumers. Some of the most differentiating factors in every hospitality environment is the costumer experience, this increasing competitions has made hoteliers search for the competitive advantage.
Excellence in service doesn’t just come from one day to the next, we will be looking at hotels making investments to train there personnel in order to increase the value of what the customer is paying for. This is a key factor for competitiveness as nowadays we are living in times where brand loyalty is no longer a main factor in the costumers choice.
Technology
Technology has not only become a key factor for competitiveness in customer satisfaction, it is also an advantage for the establishment as it improves operational activities. Advanced software and communication tools allow developing operational efficiency. In addition, decision-making through decision support tools, databases and modeling tools assist the manager’s job. Thanks to these tools managers and other employees can take better decisions that ultimately contribute positively to the establishment.
Wireless communication offers a competitive edge: Increases staff productivity and reduces response time to satisfy guest requests, improves overall guest satisfaction and service, increases efficiency by saving time and reduces human errors and provides higher quality customer service.
Technology is a huge part of the hospitality industry and is growing at a relentless pace. There are a few trends hotels must be able to keep up with in order for them to not be flying blind. The first one is mobility, new devices such as tablets or smartphones have revolutionized the way people interact with technology. This enables hotel team members to 'meet and greet' their guests at any location, improving the personalization of the check-in experience and reducing the costs associated with static reception desks and all their technology at each location. Another important trend is the social media, trip advisor, Facebook and twitter are beginning to have a profound impact on the industry. Hotels must be aware of their reputation and actions can be taken to correct what is necessary. Finally, personalized service experience has been on the rise as people are increasingly demanding a unique touch accommodating their needs and preferences. In order to facilitate this, hotels must create a database with the guest preferences enabling higher quality service.
Ecology
Sustainable tourism will never be completely sustainable, the industry will always have an impact on the environment, but it can begin to work towards making it more sustainable. As many are aware, more and more countries are developing their tourism industry, and as a direct effect we are diminishing our natural resources, consumption patterns are changing and we are polluting. There must be a response by the industry to survive, if we continue the way we are going there might not be anything left for future generations.
The solution being approached by many now-a-days does not only consist on planting trees and hanging plants off their walls, but becoming friendly with the environment. This means taking care of the indigenous people in the area, looking after the community and its natural resources. Economically speaking, the implementation of green technology may look like a big investment at the beginning but the real benefits come in 10 or even 20 years from now, new ways of spending energy instead of using electricity and combusting materials will not only benefit the world we live in, but will also reduce operational costs in the long run.
With these initiatives people will begin to change their consumption patterns and will become more aware of the environment. With around a billion people travelling every year with an average spending of 700 USD becoming more “green”, we will see hotels investing big money in sustainability even before 10 years. What do we really want to leave behind for future hospitality entrepreneurs?
Marketing
Traditional marketing is becoming obsolete; we are failing to deliver the same effective message to all segments of a market. Why is this?? Because of the way we are transmitting the message. Consumers today are technology-enabled; the internet is a powerful tool which has allowed for the marketing landscape to change. Nowadays the power has shifted to the consumer, through social networking and blogs, consumers have been able to express opinions and share information around the globe for millions of people to see and share. Consumers trust more consumers than they trust the actual organizations, online content must be handled very delicately as it may change their perception of the hotel, resort or destination. Hospitality establishments must be spot-on, they must begin to invest in digital marketing, this will allow them to get an edge on the competition.
As an end result, guests will experience better attention, for example: commenting on twitter about something gone wrong may sometimes be more effective than calling the front desk, everything becomes magnified. There are no more secrets, now if things go wrong 1000 people will know about it, if things go right 1000 will know about it.
All in all, the hospitality industry needs to keep adapting and innovating to ensure their survivability. In the next 10 years I believe we will see more people travelling all over the globe, that is for tourism and employment, service will be a cutting edge in competition for those who invest on it as consumers crave a more personalized service. Hospitality establishments will also begin to invest in sustainability for economic and social causes as the world is becoming more aware that we are deteriorating the environment, we grow 5% annually as an industry, if we don´t take care of it our chances to survive become slim. I believe there is a new era in marketing, digital marketing, everyone’s attention is channeled through social networking and investments are imperative in order to effectively utilize, manage and adapt to better understand the market. Finally, technology, this pretty much links all the mentioned before together. Without the right technology you will most probably be falling behind, as you will be insensitive to societies changing dynamics.

The hotel industry is a business that by its definition is always looking to be revolutionizing, expanding and adapting its particular service to the new market and global trends as they develop. Technology plays a very important role concerning how fast can these changes be made and these new trends molded into the specific requirements of the user or company. But in order for these elements to combine and generate revenue, hoteliers need to know how to use and understand the impact that it is causing that instant on the perspective of future guests. This is why I believe that in the next decade, with the help of technology and education, personalization of service will be the key factor to staying on the competitive end of the hotel industry.
I will now discuss briefly what I believe are the six key technology trends that will be the topics of tomorrow.
I. SaaS: Software as a Service. The whole idea behind having different programs tailored to specific needs is to facilitate action and processes. I will refer to this software as “the cloud” for easier comprehension and the fact that it is not in a fixed location. Firstly, initial investment is lower with the cloud as there are no initial hardware costs or associated expenses such as full time, in-house IT staff to maintain the system. Secondly, hotels like the idea of taking the headache and distractions of IT off their site, leaving them free to focus on the day-to-day business of looking after their guests. As well as the low capital expenditure of the cloud and the cultural "fit", there is also the fact that implementation timetables can shrink from months to days, resulting in immediate and obvious benefits in obtaining time to value. The sum total of these drivers is that cloud technology is no passing fad: for the hospitality sector it is the new norm.
II. Mobility: Mobile is the new face of computing as devices such as tablets and smart phones revolutionize the way we interact with technology. Hospitality is no exception to this revolution, in some cases even leading the way. There has often been the expectation that because hotels are, by their very nature, fixed entities, mobile technologies may have minimal impact. However, this myth has been thoroughly laid to rest as tablets, mobile phones, smart phones and laptops have become critical tools on both sides of the check-in desk.
Now, I do not mean for mobile devices and future technologies to replace human contact because that is the very essence of what we are doing, and why I chose to study here at CESSA. Although 21% out of 100 guests are looking forward to checking in, ordering room service, scheduling meetings, and do all processes through a device, the vast majority expects a certain level of human care and contact from their service provider.
III. Personalized Systems: Customers expect their experience within a hotel to be totally personalized to them: from the welcome message on the television screen and food preferences to additional services such as personal training or flowers in the room.
This quickly creates a huge range of valuable customer preference data that needs to be fed into the hotel management system in order to deliver a personalized, high quality service for each return visit. This is not just a case of linking the customer relationship management system into the hotel operations - it is embedding the process of capturing guest preferences and proactively using that data.
IV. Integration: Hotels span many functions - from accommodation and event catering to specialized facilities such as golf or health spas. Each of these areas has, traditionally, operated an individual software system. Whilst this approach has delivered specific functionality, it has also led to massive amounts of information.
Integrating these systems can provide more comprehensive management information, faster reporting and a truly comprehensive view of profitability. The hotel can also pull together truly holistic reports for management information and customer communication.
In the same way, integration offers the possibility of being able to "revenue manage" the guest across all areas of their stay: this requires transaction level interfaces but are not necessarily complex to use. Critically it aligns the marketing -based personalized offering with the financial outcome of the revenue secured.
V. Social: Social media has had a profound impact upon the hospitality industry. Trip Advisor has become one of the main sources of information for people researching holidays, hotels and leisure facilities. Meanwhile, newer social tools like Facebook or Twitter are quickly becoming just as influential. For any hotel to not at least monitor social media is as good as thinking that guests will just show up.
The online reputation of a property is business critical. It does not however, stand alone as a marketing department concern, but relates directly to daily operations. As such, social media monitoring must be interfaced with the hotel management systems so that swift, appropriate actions can be taken.
VI. The last major trend currently in the hospitality industry is globalization. In the 21st century, hotel companies will need to adopt different management approaches to survive and develop amidst high levels of economic uncertainty. As international trade and business expand, there is no question that international links will become more important for the hotel industry. This means that the technology systems in use - especially those in large chains - must account for the global perspective.
This may be something as relatively simple as issues of scalability or international languages, or something as complex as accounting for different regulations and working practices in different countries.
Finally, I would also like to point out the necessity of education and the key role it represents in the future. It is an intricate word “future”, involving an image as far as your imagination allows you to, and it depends on as many variables as there are people who can make it change. Now, we can predict room demand, occupation, seasonality based on past behavior and solid numbers, but we cannot know for sure the direction of an industry that is constantly changing. The subjects that students are required to know and be tested on in the future are not yet known. The problems that we will face are complex and unknown, but what we do know and possess thanks to you, are the tools to examine and understand what is happening and why it is behaving in such a way. This foundational idea is why students thrive on teachers who have had previous experiences on the subject. It is of outmost importance that classes are led by teachers who dominate

Where’s tourism headed during the following decade? During the past decade tourism grew in an impressive way, it’s one of the most important economic sectors in the world today. It has been estimated that tourism itself grew by 5% during the first eight months of 2013, compared to the same period of 2012, reaching 747 million, at this rate by 2030 the projection is a 3.8% increase per year. “While global economic growth is in low gear, international tourism continues to produce above average results in most world regions, offering vital opportunities for employment and local economies,” said UNWTO Secretary-General, Taleb Rifai at the Opening of the European Tourism Forum in Vilnius However a decade is a small short span for a big change to be made. Some changes are happening in the way tourists travel. Be it in the form of arriving to their final destinations, their motives or by the benefits offered by hotels in activities and luxury. The tourism industry is also taking action, to create awareness in the need of being sustainable, offering their customers different options to fill their needs. Last of all people nowadays expect more for their money’s worth, they are looking for long lasting experiences. As we may notice, being part of the industry today is more of a challenge than what it was before, and that challenge will only continue to rise, demanding an improvement.
Countries have noticed the benefits of tourism in their GDP’s and in their employment percentage. Also investors look for locations where they may create a place similar to paradise, this is shown by a trend which has marked the sector for many years, were tourism is growing by a 6% in emerging economy destinations, while advanced economies have grown by 4%. 20 years ago only the people who had money had the chance to go on vacations to another country. Today with the creation of cheap airlines, they offer customers low cost flights, giving families a chance to go away for weekend getaways. China and Russia increased their tourism expenditure, China has ranked top of the list since they are a growing economy and they have fewer restrictions on foreign travel, the other countries which remain in the list show an increase in their tourism expenditure, except for France and Italy whom showed a decrease. Their growth in the tourism demand, make people to expect quality in the service and location, for them being surprised is more than just a simple meal.
Due to noticeable climate changes, people are aware that a change in their lifestyles has to be made, in order to continue enjoying of the world we live in. Just as the people see it, the tourism industry is taking part of the change, focusing on sustainability, creating design and service options offered to the customers, giving them a reason to feel good about themselves while enjoying their trip. They ensure that the destination retains and enhances the distinctive attributes that makes it attractive to tourism, by offering an emotionally intelligent approach to service that begins with empathy. Hotels take careful consideration of the effects that operating systems, materials, and purchasing policies have on the environment, therefore they are continually developing new initiatives and procedures to minimize the ecological impact. They try to make a difference by using programs in place to conserve energy, re-use water and re-cycle waste materials produced by resorts. Although it might generate a greater cost for the hotels, therefore increasing the final bill, people are willing to pay for the service to help out the environment.
As the industry continues to grow, expectations rise, people are looking for experiences rather than simply getting to know the place. The industry is conscious of that, therefore hotels to keep up, without investing a lot of money, renovate their decoration, offer a better service for free, whatever small change that makes a huge difference. Also the motives to travel have changed, generating segmentation in tourism. Who would’ve imagined that going on a Safari to Africa, would become as one of the must live experiences one has to encounter, or flying across the globe simply to race in a sports event. Hotels are signing contracts with famous chefs, just to hold exclusivity of the brand inside their premises. Food has also brought tourism along the way, be it for gastronomical excursions or simply to take cooking classes from your favorite chef. Design is the economic power in Italy, and people travel all the way to Milan, pay off the rack prices to stay at hotels during fashion week and settimana del mobile, the same happens in France. Architecture has always played a strong role in tourism, that’s why people go to Egypt, to see the pyramids, to Dubai, to see amazing constructions, such as the Burj Khalifa and the Burj Al Arab, to Malaysia to see the Petronas, to France to see the Eiffel Tower, Italy to the Coliseum, the duomos and Vatican City. Therefore hotels know that they play an important role, to host the guests, so to retain their customers for future visits they have to go the extra mile. That way they also create loyalty since they know that a happy customer is a returning customer.
Tourism is for sure changing and it’s changing for good. Demand has made the industry try harder, creating new experiences, offering better services, new locations to explore, better installations, all to satisfy the customer. Some parts of the world suffer an economic crisis; however they know that to maintain themselves afloat, tourism has to be taken care of. It’s where their countries receive money from; luckily tourism will continue to grow. Transportation has made it easier for people to travel and technology shows them what is out there, what they have to live and experience. However with changes comes, a higher competitiveness. Being students right now may be seen as an advantage or a disadvantage, depending on how we see the market. It’s an advantage since we are living the changes, we are noticing the growing demands and where we may stand out in the outer world. However it´s a disadvantage because we have to work harder, to keep up and go ahead of what the industry is expecting of us, surprise them. That´s why I believe that doing the internships we are required and working in our free extra time gives us an advantage and gives us the tools to practice what we’ve learned in school. Therefore when we finish this journey and we graduate, we may graduate as the best, because we have seen what is expected in a future and we know we have to anticipate to future demands.
